Warm up winter with chilli

BEAN SCENE: Aduki (or azuki-adzuki) beans, also known as red mung bean, are a small bean of about five millimetres, widely grown throughout East Asia.

BEANS are a filling alternative to meat. This recipe does have a few spices in it, but remember you can get small amounts from Bin Inn to try them out.

This chilli can be served on rice, buckwheat or pearl barley.

Bean Chilli

Serves 4

1½ cups or 1 tin cooked beans (borlotti, aduki, kidney or haricot beans)
1 medium onion
1 teaspoon dried oregano
1½ teaspoons smoked paprika
1½ teaspoons ground cumin
Pinch of ground cayenne or chilli powder
2 teaspoons sugar
Salt to taste
1 tin chopped tomatoes
3 tablespoons tomato paste

Optional

½ capsicum
Fresh coriander

Sauté the onions until soft and clear. Add the remaining ingredients except the coriander, and simmer, with the lid off, for10 minutes.

At the same time, cook the rice, buckwheat or pearl barley that you will be serving the chilli on.
Serve garnished with coriander if you wish.
